Ingredients to make a basic street Rolex

For the Omelette:

 

  • 2 large eggs
  • 1/4 cup red onion, finely diced
  • 1/4 cup tomato, diced
  • 1/4 cup green cabbage, thinly shredded (optional, for crunch)
  • 1 tbsp fresh coriander (cilantro), chopped
  • Salt and black pepper, to taste
  • 1–2 tsp vegetable oil (for frying)

 

For the Chapati

 

  • 1 large freshly made or store-bought chapati (a soft, layered flatbread)

 

 

Instructions

 

  1. Prepare the Veggies & Eggs: Crack the eggs into a small bowl or mug. Add the diced onions, tomatoes, cabbage, and fresh coriander. Season with a pinch of salt and black pepper, then whisk vigorously until well combined. 
  2. Cook the Omelette: Heat a non-stick skillet over medium heat and add a teaspoon of oil. Pour in the egg-and-vegetable mixture, swirling the pan to spread it out into a wide, flat circle roughly the same size as your chapati. 
  3. Attach the Chapati: Let the omelette cook for about 1–2 minutes until the bottom is set but the top is still slightly wet. Place the chapati directly onto the wet surface of the egg, pressing down gently so it bonds to the cooking omelette. 
  4. Flip: Carefully flip the entire thing over (chapati side down) so the chapati warms up and crisps slightly on the bottom, about 1 minute. 
  5. Roll and Serve: Slide the Rolex onto a plate or piece of foil. While it's still hot, roll it up tightly into a wrap. Wrap the bottom half in parchment paper or foil to hold it together, and enjoy it while it's warm!

A Restaurant Rolex

 

1. The Gourmet Fillings & Sauces

Instead of just raw vegetables, prepare these gourmet elements first:

  • The Meat (Nyama Choma style): Sear 100g of thinly sliced beef tenderloin or chicken breast in a hot pan with minced garlic, ginger, and a splash of soy sauce until caramelized.
  • The Kachumbari (Fresh Salad): Toss diced tomatoes, red onion, fresh coriander (cilantro), and a squeeze of lime juice with a pinch of salt.
  • The Spicy Mayo: Mix 2 tablespoons of mayonnaise with 1 teaspoon of sriracha or peri-peri sauce.

 

2. The Flaky Layered Chapati

Using a layered (multi-ply) chapati is crucial for texture.

  • Brush a rolled-out dough circle with ghee or oil.
  • Roll it into a tight rope, coil it like a snail, and roll it flat again before frying.
  • This creates dozens of flaky, buttery layers that mimic puff pastry.

 

3. The Restaurant Assembly

  1. Whisk the Eggs: Whisk 2 eggs with finely shredded purple cabbage, grated carrots, a pinch of dania (coriander), and salt.
  2. Cook the Omelet: Pour the eggs into a hot, oiled skillet. Spread them thin.
  3. Fuse the Bread: While the top of the egg is still slightly wet, press the flaky chapati firmly onto it.
  4. Flip and Crisp: Flip the whole stack. Let the chapati get golden-brown and crispy against the pan for 60 seconds.
  5. Layer the Fillings: Slide it onto a board egg-side up. Drizzle the spicy mayo down the center. Add the warm seasoned meat and a generous spoonful of the fresh Kachumbari.
  6. The Perfect Roll: Roll it tightly. Slice it in half diagonally and serve upright on a plate, garnished with a lime wedge and extra coriander.

Okikomando Recipe 

This is Uganda's ultimate budget-friendly, protein-packed street food. When paired with a Rolex, it creates a massive, incredibly filling meal.

Ingredients

2 cups cooked red kidney beans (or pinto beans), with a bit of their cooking liquid

1 medium red onion, finely chopped

2 medium tomatoes, chopped

1 green bell pepper, diced

2 cloves garlic, minced

1 tsp curry powder (Royco Mchuzi Mix is the authentic local choice)

2 tbsp vegetable oil

Salt and black pepper to taste 

Instructions

Heat oil in a pan over medium heat

Fry onions and garlic until soft.

Add tomatoes, bell pepper, curry powder, salt, and pepper. Cook until tomatoes break down into a thick paste.

Simmer Beans: Pour in the cooked beans and their liquid.

Reduce heat to low. Cover and simmer for 10–15 minutes until flavors merge and the gravy thickens.

Serve: Pour the hot beans into a bowl and serve immediately alongside your Rolex. 

Muchomo

Muchomo means "roasted meat" in Luganda. On the street, this is cooked over open charcoal, giving it a distinct smoky char. 

Ingredients 

1 lb (500g) beef sirloin, goat meat, or chicken breast, cut into 1-inch cubes

3 cloves garlic, minced

1 tbsp ginger, grated

1 tbsp soy sauce

1 tbsp vegetable oil

1 tsp curry powder

1 tsp salt

1/2 tsp cayenne pepper (optional, for heat)

Instructions 

Marinate Meat: In a bowl, mix garlic, ginger, soy sauce, vegetable oil, curry powder, salt, and cayenne.

Toss the meat cubes in the marinade until coated. Cover and refrigerate for at least 1 hour. 

Skewer: Thread the meat tightly onto wooden or metal skewers.

If using wooden skewers, soak them in water for 30 minutes first to prevent burning.

Grill: Heat a grill pan, outdoor barbecue, or oven broiler to high heat.

Cook the skewers for 3–4 minutes per side (about 12–15 minutes total) until beautifully charred on the outside and cooked through. 

Serve: Serve hot, straight off the skewer.
